Lambics are not brewed with ale (which ferment on the top) nor lager yeast (ferment on the bottom) but with natural yeasts occurring in the air in a the Senne valley in belgium. Thus lambics don't have yeast added but are imbibed with it from the air via fermenting in open vats. That's what gives them that tart/puckery taste.
